The estate farms 30 hectares of vines on a fossil-rich gravel ridge that shapes wines with structure and minerality.
Cabernet Sauvignon and Merlot lead the plantings, with smaller amounts of Cabernet Franc and Petit Verdot. A few century-old vines of Malbec and Carménère remain but are not typically part of the standard cépage.
The Grand Vin emphasizes harmony and precision through parcel selection. The second wine, Haut-Bailly II, comes from younger vines or less-favored plots for an earlier-drinking expression.
